You would rather binge on some mashed potatoes and honey baked ham, or, hey, let's skip dinner all together and just have appetizers and dessert! YUM! Here's the deal, it's the holiday season, so your opportunities to indulge on delectable goodies will be abundant. It's fun to enjoy these treats, but all in moderation.
Here's what I'm suggesting, if you know you have parties in your schedule, substitute one meal a day with my Green Goddess Detox Soup, paired with a serving of lean protein (chicken, turkey, fish, egg whites, or tofu). This will ensure you're getting all your necessary nutrients and fiber, and it's a lighter meal that will keep you satiated so you don't overdo it at the company cocktail party later in the day. Whatever green vegetables you have on hand. I went to the frozen section of my local grocer and picked up a bunch of pre-chopped vegetables, as well as some fresh options I chopped up on my own.
Heat oil in large pot, and add any frozen vegetables. If you're using all fresh vegetables, start by sauteeing your sweet onion and garlic. Add all vegetables and allow to soften. Thicker vegetables (celery and zucchini) will take longer to cook. Slowly add in broth, and let simmer for 15 minutes.
