It was a day for experimentation and kitchen creativity. What did I have in my pantry and fridge that I could throw together to make a deLITEfully delicious Not-Your-Mama’s-Banana-Bread? First of all, I like to make mini muffins. They’re the perfect size for a quick breakfast or snack, and, let’s be honest, they’re so dang cute! I collected my random ingredients and began my culinary creation..
Instead of white flour, I used a white whole-wheat flour. Instead of butter, I used coconut oil. I added in some Maca powder for extra punch (and the flavor goes really well with bananas and vanilla), cinnamon for a little kick, and some nonfat Greek yogurt to keep the bread moist. I must say, the concoction came out quite well! Now I have a healthy snack to enjoy during the next few days of soccer madness..
(yields 36 mini muffins or one loaf of bread)
2 cups of white whole-wheat flour (or whatever flour you prefer for baking)
¾ teaspoon baking soda
½ teaspoon salt
3 teaspoons Maca powder
1 teaspoon cinnamon (plus some to sprinkle on top)
½ cup white sugar
½ cup brown sugar
¼ cup coconut oil
2 mashed bananas (the mushier, the better!)
½ cup nonfat Greek yogurt
1 teaspoon vanilla extract
Preheat oven to 350
Combine the flour, baking soda, salt, Maca, and cinnamon, stirring with a whisk.
Place sugars and coconut oil in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist.
Spoon batter into lightly coated muffin tins and sprinkle cinnamon over the top of the batter. Bake for approximately 12 minutes, or until a toothpick inserted in the center of a muffin comes out clean. If you prefer to make a loaf of bread, use an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until toothpick comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.
If the bread is not sweet enough for you, consider drizzling a bit of honey over it before eating.
