If you’re looking to get back on track with your healthy eating habits, but are bored of eating the same thing everyday, I have some meal inspiration to offer you as we head into the fall months. Here are three simple salad recipes that will leave your taste buds dancing, your figure lean, and your family and friends asking for seconds.
Ingredients: Arugula, avocado, and quinoa
Easy Addition: steamed asparagus and/ or artichoke hearts
Ingredients: Spinach, roasted or steamed sweet potato, avocado
Easy Addition: toasted pumpkin seeds and/ or dried cranberries
Ingredients: Spinach or other leafy greens, roasted beets, goat cheese
Easy Addition: walnuts and/ or red onion
1- A squeeze of lemon juice, a drop of olive oil, and a shake of sea salt.
2- Equal parts of Dijon mustard, apple cider vinegar, honey, olive oil and water to desired thickness.
